Ingredients
  • 1 (16.5-ounce) package yellow cake mix
  • 1 can (15 ounces) solid packed pumpkin
  • 1 can (12 ounces) evaporated milk
  • 3 large eggs
  • 1-1/2 cups sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans
  • 1 cup butter, melted
  • Whipped topping (optional)

Pumpkin Crunch Bars
Directions
  1. Preheat oven to 350 degrees F (175 degrees C). Grease bottom of 13 x 9 inch pan.
  2. In a very large bowl, combine pumpkin, evaporated milk, eggs, sugar, cinnamon and salt. Pour into prepared pan.
  3. Sprinkle dry cake mix evenly over pumpkin mixture. Top with pecans drizzle with melted butter.
  4. Bake for 50 to 55 minutes or until golden brown. Cool and chill. Top with whipped topping if desired.
